Nut Loaf

Dishes & Recipes

A savory vegetarian or vegan dish of ground or chopped nuts bound with breadcrumbs, vegetables, and seasonings, then shaped and baked into a loaf. It grew out of the vegetarian and health-food movements of the late 19th and early 20th centuries, popularized in part by cereal-maker John Harvey Kellogg, as a meat-free source of protein. Regional variations range from Mediterranean-style loaves with olives and sun-dried tomato to Indian-inspired versions seasoned with cumin and garam masala; it is a common meat-free main at holiday meals such as Thanksgiving, and leftovers are often sliced for sandwiches or crumbled as stuffing.
