Queso asadero is a semi-soft Mexican cheese made from cow’s milk, prized for melting smoothly without becoming stringy or oily. Its name means roughly “grilling cheese” in Spanish, reflecting its common use in melted and grilled preparations. Originating in northern Mexico, it has a mild, slightly salty flavor and a texture and meltability similar to mozzarella, making it a common choice for quesadillas, enchiladas, nachos, and chiles rellenos. It is also widely used in Tex-Mex cooking in the United States. Some producers make smoked or aged versions, or add herbs and spices, though the base cheese is mild and unaged.
