Ruby port is a fortified wine from Portugal's Douro Valley, made by adding a neutral grape spirit (aguardente) partway through fermentation, which halts fermentation early, leaves residual sugar, and raises the alcohol content to around 19-20% ABV. Common grapes include Touriga Nacional, Tinta Roriz, and Tinta Barroca. Unlike tawny port, which is aged for years in wood and oxidizes to a brown color, ruby port is aged only briefly in large neutral vessels to preserve its deep red color and fresh, fruity character. It has flavors of blackberry, plum, and cherry with notes of spice and vanilla, and is typically served as a dessert wine or digestif alongside dark chocolate, blue cheese, or walnuts, or used in marinades and sauces for red meat.
