Salad Rolls

Salad rolls, also known as fresh spring rolls or summer rolls, are a type of Vietnamese appetizer or light meal consisting of fresh vegetables, herbs, and sometimes protein, wrapped in a thin, translucent rice paper wrapper. Unlike fried spring rolls, salad rolls are served unfried and cold, which is the main point of confusion between the two. These delicate rolls originated in Vietnam but have gained popularity worldwide as a healthy and refreshing alternative to fried spring rolls.

The rice paper wrappers used for salad rolls are made from rice flour, water, and sometimes tapioca starch. They are typically round or square in shape and have a soft, pliable texture when rehydrated. To assemble the rolls, the wrapper is briefly dipped in water to soften it, then filled with a variety of ingredients such as shredded carrots, bean sprouts, lettuce, mint, basil, cooked shrimp, pork, or tofu. The fillings are arranged neatly in the center of the wrapper before it is carefully rolled up, encasing the contents.

Salad rolls are often served with a dipping sauce, such as a sweet and tangy fish sauce-based nuoc cham, a peanut sauce, or a spicy chili-lime sauce. The sauces complement the fresh, crunchy textures and clean flavors of the rolls. In Vietnamese cuisine, salad rolls are a popular street food and are also commonly found on the menus of Vietnamese restaurants worldwide.

Beyond Vietnam, salad rolls have been adapted and incorporated into the culinary traditions of other Southeast Asian countries, each with their own unique regional variations. In Thailand, for example, salad rolls may be filled with ingredients like shredded green papaya, mint, and a spicy, tangy dipping sauce. In Indonesia, the rolls are known as lumpia and can be filled with a variety of ingredients, including jicama, bean sprouts, and chicken.

Salad rolls are valued not only for their refreshing taste but also for their nutritional benefits. The rice paper wrappers are gluten-free, and the vegetable and protein fillings provide a source of fiber, vitamins, and lean protein, making them a popular choice for those seeking a nutritious snack or starter.
