Scoring is making shallow cuts in a food's surface. Bread scoring directs a loaf's expansion in the oven. Scoring fatty skin can help expose fat during cooking; cuts in vegetables or other foods may aid shaping, seasoning or presentation.
The required depth varies. An instruction to score a loaf is different from cutting through a roast's skin, and neither means slicing all the way through the food.
