Shelled Peas

Shelled peas, also known as garden peas or English peas, are the edible seeds of the Pisum sativum plant, a cool-weather annual legume. Originating in the Near East, peas have been cultivated for thousands of years and are a staple ingredient in cuisines around the world.

To prepare shelled peas, the pods are picked when the peas inside are young and tender, then the peas are removed from the tough, fibrous pods. This process of removing the peas from the pods is called "shelling" or "podding." Shelled peas have a sweet, delicate flavor and a soft, slightly starchy texture.

In cooking, shelled peas are highly versatile. They can be used raw in salads, sautéed with vegetables, added to soups and stews, or featured as the main ingredient in dishes like pea soup, pea risotto, or shepherd's pie. Peas pair well with ingredients like mint, butter, bacon, onions, and potatoes. They are a common component in many classic French dishes, such as petits pois à la française (peas with lettuce and onions) and ratatouille.

Peas are an excellent source of vitamins, minerals, and fiber. They contain vitamins A, C, and K, as well as folate, iron, and protein. The bright green color and fresh flavor of shelled peas make them a popular ingredient in spring and summer cooking.

While fresh shelled peas are the most common form, peas can also be found frozen, canned, or dried. Frozen peas are a convenient option that retains much of the flavor and nutrition of fresh peas. Canned peas have a softer texture and can be used in a pinch, while dried peas are often used to make split pea soup.

Variations of shelled peas include snow peas, snap peas, and sugar snap peas. Snow peas have flat, edible pods and small, undeveloped peas. Snap peas have thick, crunchy pods and full-sized peas. Sugar snap peas are a hybrid that combines the best qualities of snow and garden peas, with an edible pod and sweet, plump peas.

Whether used as a simple side dish or as a key ingredient in a complex recipe, shelled peas offer a fresh, vibrant flavor and a versatile texture that makes them a beloved ingredient in cuisines worldwide.
