A sushi roll, or maki-zushi, is a cylinder of nori (dried seaweed) wrapped around vinegared rice and a filling, rolled with a bamboo mat (makisu) and sliced crosswise into bite-sized pieces. It differs from nigiri, where a filling is pressed onto a mound of rice rather than rolled, and from temaki, a hand-rolled cone. Traditional rolls have the nori on the outside; "inside-out" rolls (uramaki), such as the American-created California roll (avocado, imitation crab, cucumber), reverse this so rice forms the exterior. Fillings range from raw or cooked fish to vegetables, and rolls are typically served with soy sauce, wasabi, and pickled ginger.
