Swedish Pancakes

Dishes & Recipes

Swedish pancakes (plättar) are thin, crepe-like pancakes made from a batter of flour, eggs, milk, and a little sugar, cooked on a lightly buttered griddle or skillet just until set, without the puffing or deep browning typical of thicker American-style pancakes. They are traditionally served with lingonberry jam, whipped cream, fresh berries, or powdered sugar, and appear both as a breakfast or dessert dish and as a smörgåsbord item alongside Swedish meatballs and pickled herring. They can also be rolled or folded around sweet or savory fillings such as cheese, ham, or fruit.
