Sweet vermouth is an Italian aromatized fortified wine: a white or rosé base wine fortified with spirit and infused with a blend of herbs, spices, and other botanicals (commonly wormwood, citrus peel, cinnamon, clove, and chamomile), then sweetened. It originated in Piedmont in the 18th century as an herbal tonic before becoming a popular aperitif. In the kitchen it's mostly used in cocktails such as the Negroni, Manhattan, and Boulevardier, where its slightly bitter, sweet flavor balances the other ingredients; it can also go into marinades, sauces, and braises, or be used to deglaze a pan in place of other wine. It differs from dry vermouth, which is made without added sugar and is used in drinks like the martini rather than sweeter cocktails. Major producers include Italian brands like Cinzano and Martini & Rossi and French brands like Noilly Prat and Dolin.
