Vodka is a distilled spirit generally chosen for a relatively neutral flavor. It is used in cocktails, some pastry recipes, and sauces. Flavored vodkas add other tastes and are not always interchangeable with plain vodka. Cooking with vodka does not guarantee that all alcohol evaporates.
