White Grapefruit

Ingredients

White grapefruit is a grapefruit variety with pale yellow, greenish-white flesh, as opposed to the pink or red flesh of other grapefruit varieties, and is generally more tart and less sweet than they are. Grapefruit itself (Citrus x paradisi) is a natural hybrid of pomelo and sweet orange first found in the West Indies.

Major growing regions include Florida, Texas, and California, as well as parts of the Mediterranean such as Spain and Israel.

White grapefruit is eaten halved at breakfast, juiced, added to salads, and used in cocktails, marinades, and sauces; its zest also flavors baked goods and savory dishes. Its tart, slightly bitter flavor pairs well with rich, fatty foods like avocado, salmon, and pork, with herbs such as mint and basil, and, for a sweeter pairing, with honey, vanilla, mango, or pineapple.
