White Peach

Ingredients

White peach is a peach variety (Prunus persica) with pale, cream-to-white flesh that is lower in acid than the more common yellow peach, giving it a softer, more floral sweetness. It is the base of the classic Bellini cocktail (puréed white peach with Prosecco) and appears poached or in panna cotta in Italian cooking, while some East and Southeast Asian cooking uses firmer, less-ripe white peaches in pickles and stir-fries. The flesh is juicy and tender with delicate floral notes. In sweet dishes it pairs with vanilla, honey, almond, and mascarpone; in savory dishes, with prosciutto, burrata, arugula, and balsamic vinegar.
