- 2 Carrots
- 2 Onions
- 2 Celery
- 2 Tbsps. Garlic
- 2 Tbsps. Butter
- 2 Tbsps. AP Flour
- 1 ½ qts Chicken Stock
- ¼ C white wine
- 2 teaspoons fresh thyme leaves
- 1-2 Bay leaves (1 large or 2 small)
- 4 -5 oz Bacon or pancetta
- 1 Sheet of Puff Pastry
- 1 egg for egg wash (whipped in a bowl)
