Delicata Squash Bread Pudding - The Local Palate

Ingredients

• 8 cups brioche bread, cut into 1-inch cubes
• 8 ounces sweet italian or breakfast sausage (bulk, or casings removed)
• 1 tablespoon butter
• 1 bunch black kale (dinosaur, tuscan, lacinato), ribs removed, chopped,1 medium delicata
• squash, seeds removed, sliced ¼-inch thick
• 6 whole eggs, plus 2 yolks
• 3 cups heavy cream
• Salt and pepper to taste
