Lamingtons – Dee-Licious

Ingredients

• **Butter Sponge**
• 125g unsalted butter softened
• 260 plain flour, sifted along with baking powder
• 220g caster sugar
• 3 1/2 tsp baking powder
• 1/2 tsp vanilla extract
• 3 eggs, room temperature
• 125ml milk (full cream)
• **Chocolate Coating**
• 300g of dark chocolate buttons
• 100ml thickened cream
• 100ml milk (full cream)
• **Decorating**
• 1/2 cup desiccated coconut
• 1/4 cup strawberry jam
• 1 cup thickened cream
• 2 tsp caster sugar
