This marinated grilled zucchini is an amazing vegetarian barbecue side dish. Grilled zucchini topped with feta, pecans and more.
Ingredients
- 200 gram feta cheese
- few sprigs of fresh parsley
- half large red onion
- 100 gram pecan nuts
- 2 zucchinis
- 1 lemon (juice)
- 5 tablespoons olive oil
- 4 garlic cloves
- 2 teaspoons ground paprika
- 2 teaspoons ground cumin seeds
- 1 red chili pepper - depending how spicy you'd like the marinade
- pepper and salt to taste
