Hamburger soup | Slimming World

Ingredients

• 1 large onion, diced
• 2 large carrots, diced
• 2 celery sticks, diced
• 1 litre hot beef stock
• 500g lean beef mince (5% fat or less)
• 2 tsp garlic granules
• 2 tbsp smoked paprika
• 3 tbsp tomato purée
• 400g can chopped tomatoes
• ½ tbsp dried Italian herbs or dried oregano
• 2 level tbsp American-style mustard
• 4 medium slices of bread from a 400g white loaf, torn into small chunks
• 1 small red onion, halved and thinly sliced
• 2 gherkins, thinly sliced
