• 2.2kg boneless pork shoulder joint
• 150ml cider
• 50ml cider vinegar
• 80ml maple syrup
• 50ml soy sauce
• 3 tbsp oyster sauce
• 1 tbsp fennel seeds
• 1 tbsp cumin seeds
• 4 cinnamon sticks
• 2 star anise
• 1 ½ tsp black peppercorns, crushed
• 1 ½ tsp smoked paprika
• 3 garlic cloves, crushed
• 1 tsp chilli flakes
• 2 tsp salt
