Ingredients

• 2 cups all-purpose flour, plus additional for kneading
• 1 tsp. kosher salt
• ½ cup lukewarm water
• 4 Tbsp. unsalted butter, cubed and softened
• 1 egg
• 12 oz. Yukon gold potatoes, peeled and cubed
• 3 cloves garlic, peeled
• 3 strips bacon, diced
• 1 ½ cups diced onions
• Salt and black pepper to taste
• 3 Tbsp. sour cream
• 3 Tbsp. unsalted butter, divided
• 1 Tbsp. chopped dill
• Chopped dill, optional
