Honey Cookies (Lebkuchen)

Ingredients

• 2 cups honey
• 8 oz brown sugar
• 5 cups flour
• 1Tablespoon each: allspice, nutmeg, cardamon, cinnamon, ground cloves
• 1 t ginger and mace
• 1 lemon zest (whole lemon, save juice)
• 1 cup chopped Hazelnuts
• 1 T baking soda
• 1 T baking powder
• 1 T almond extract
• lemon juice, plus 1 t lemon extract
• 1/4 cup brandy
• 1 cup crystallized ginger chopped (and raisins and cherries or other dried fruit)
