Cucumbers with Tomatoes and Onions
A translation from the original German, Gurken mit Tomaten und Zwiebeln. Very much an in season dish to be made with fresh garden cucumbers and tomatoes.
Ingredients
- 500g tomatoes
- 1 large field cucumber
- 250g pearl onions (or substitute chopped onion)
- 70g butter
- 2 Tbsp sugar
- 1/2 cup bouillon
- 1/2 cup chopped bacon (optional)
- 2 Tbsp sour cream (or sub yoghurt)
- 2 Tbsp minced parsley
- Salt to taste
