- 3 medium yellow onions, thinly sliced
- 15 ml (1 tbsp) oil
- 15 ml (1 tbsp) half-salted butter
- 60 ml (1/4 cup) maple syrup (preferably dark syrup for its robust flavour)
- 30 ml (2 tbsp) red wine vinegar
- 1 stem fresh thyme
- Salt and pepper, to taste
