Marlborough Apple Pie - Chew Nibble Nosh

Ingredients

• 1 9-inch parbaked pie shell, cooled
• 4 Tbsp. butter
• 2 Granny Smith apples, peeled and shredded (2 cups)
• 2 Fuji, Gala or Golden Delicious apples, peeled and shredded (2 cups)
• 1/2 cup sugar
• 1/4 tsp. ground cinnamon
• 1/4 tsp. ground mace (or substitute nutmeg)
• 1/4 tsp. salt
• 3 large eggs, beaten lightly
• 1/2 cup heavy cream
• 5 Tbsp. dry sherry (I used Golden Sherry, because my grocery was out of “dry”. It worked perfectly.)
• 1 tsp. grated lemon zest
• 1 tsp. vanilla extract
