- 10lb Pork Belly
- 8 Cloves of Garlic, peeled but left whole
- Zest of 1 Orange
- Zest of 1 Lemon
- 1 Tbsp of Fennel Seeds
- 1 Tbsp of Peppercorns
- Salt (I use coarse Kosher salt)
- Fresh Rosemary
- Fresh Sage
- Fresh Thyme
