Vegan, gluten free brownies without xanthan gum - George Eats
Vegan, gluten free brownies that FODMAP friendly, grain free, and as fudgy as their regular counterparts. Easy to make and delicious.
Ingredients
- 200 g vegan dark chocolate (see introduction)
- 50 g Nuttelex buttery or preferred butter substitute (or coconut oil, but see the notes first)
- 1/2 cup caster sugar
- 70 g (approximately 1/2 packed cup) light brown sugar
- 1 tablespoon espresso
- 2 tablespoons cocoa
- 1 teaspoon sea salt flakes
- 2 teaspoons vanilla bean paste
- 3/4 cup (75g) Coles Wellness Road almond flour
- 2 tablespoons tapioca flour
- 1 1/2 teaspoons baking powder
- 1/2 cup warm soy milk (if it’s cold it will seize up the mixture and ruin the batter)
