• 1 ½ cups sugar
• 1 tbsp vanilla extract
• ½ cup Koroneiki Extra Virgin Olive Oil
• Finely grated zest & juice of 1 lemon
• 3 cups all-purpose flour
• ¾ tsp baking soda
• ¾ tsp Durant Fleur de Sel Sea Salt
• ⅓ cup polenta or cornmeal
• 2 ½ cups fresh cherries, pitted (about 1 pound)
• crème fraîche, for topping
