• 2 tbsp Silver Spoon White caster sugar
• 1pinch Salt
• 1 Egg yolk (free range) (large)
• 2 tbsp Water (ice cold)
• 100g Unsalted Butter (softened)
• 100g Billington's Unrefined Golden Caster Sugar
• 2 Eggs
• 1 tbsp Allinson's Self Raising Flour
• 0.5 tsp Almond extract
• 100g Almonds (ground)
• 200g Rhubarb
• 200g Billington's Unrefined Golden Caster Sugar
• 30g Stem ginger (in syrup)
• 2 tbsp Juice of one whole lemon
• 100g Rhubarb
• 50g Silver Spoon Icing sugar
• 30g Almonds (flaked)
• 2 tbsp Hot water
