Trader Joe’s Everything But the Elote Seasoning divided; 1 T. avocado or other neutral oil; 2 large fresh jalapeños seeded and diced; 1/2 large onion finely diced; 4 cloves of garlic finely diced; 1 12 oz. jar of roasted red bell peppers diced; 2 T. butter; 1 8 oz package of softened light cream cheese; 1/2 c. light sour cream; 1/2 c. light mayonnaise; 1 t. garlic salt; 2 T. chipotle chilies in adobo sauce (more if you want to kick it up); 2 c. shredded Monterey Jack cheese; 1/2 c. crumbled Cotija cheese
