Ingredients

• 4 egg whites (at room temperature)
• 1⁄2 teaspoon salt
• 1 cup superfine sugar
• 2 teaspoons cornstarch
• 2 teaspoons cider vinegar
• 1 1⁄2 cup heavy cream (very cold)
• 4 kiwi fruit (hard, sliced or cut into wedges)
• 8 strawberries (optional – with hulls intact, rinsed, patted dry)
• unsalted butter and all-purpose flour for baking sheet
