Queso Fundido Recipe

Ingredients

• 1 tablespoon extra-virgin olive oil
• 1 cup yellow onions, small diced
• 2-3 garlic cloves, minced
• 1/4 teaspoon chili powder
• 1/4 teaspoon paprika
• 1/4 teaspoon smoked paprika
• 1/4 teaspoon ground cumin
• 1/4 teaspoon dried oregano
• 1-pound meltable Mexican cheeses like quesadilla and Oaxaca (you can also use substitute mozzarella or Monterey Jack) I recommend a blend of a few varieties
• 1 4-ounce can chopped green chilies, drained well
• Tortilla chips, for serving
