Braised Fenland Celery Recipe at Fenland Celery

Ingredients

• 1 head Fenland celery, all leaves removed for the pesto
• 1 tsp unsalted butter
• 1 pinch salt
• 1 shallot, peeled & sliced
• 1 clove garlic, peeled & sliced
• 300 ml vegetable stock
• 1 lemon, for the juice
• All of the leaves from the head of celery
• 1 tbsp flat leaf parsley leaves
• 1 garlic clove, peeled and crushed to a paste
• cayenne pepper
• ½ lemon, just the juice
• 3 tbsp roasted peeled hazelnuts
• 3 tbsp rapeseed oil
