• 4 Bone-in pork chops, 1 inch to 1½ inch thick each
• ¼ cup Simon Barbecue Jalapeño Maple Barbecue Rub
• 1 Mango, diced
• ¼ Red onion, diced
• ½ Jalapeño pepper, chopped
• 2 tbsp Cilantro, chopped
• 1 Lime, squeezed
• 1 tbsp Tequila
• ½ tbsp Salt
• ¼ tbsp White sugar
