- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 1 garlic clove, minced
- 2 cups chopped mushrooms
- 2 tsp fresh thyme
- 1 bay leaf
- 50g dried mushrooms, powdered
- 2 tbsp tomato paste
- 2 tbsp plain flour
- ½ cup red wine
- 1 cup vegetable broth
- ½ cup peas
- salt & pepper, to taste
