Pizza Salad by Michael Smith

Ingredients

• For Crispy Chewy Croutons
• 4 Slices of prosciutto
• 4 Thick slices of artisanal bread, cut into small bite-size cubes
• 2 Tbsp water
• 1 Tbsp Olive oil
• For the dressing
• 2 Tbsp Olive oil
• 1 Tbsp Balsamic vinegar
• 1 Tbsp Dijon mustard
• 1 Tsp Dried oregano
• For the Salad
• 1 Pint Cherry tomatoes, Halved
• 8 Ounces Mini bocconcini, Drained
• Leaves from 1 bunch of fresh basil
