Chestnut Stuffing

Ingredients

• 2 cups shelled chestnuts, chopped (about 4 cups with shell will yield 2 cups shelled)
• 1 - 2 pound loaf of firm white bread like Pepperidge Farms
• 4 Tbsp. butter or margarine
• 1 cup chopped onion
• 1 cup diced celery
• 2 tsp. salt
• 1/2 tsp. ground white pepper
• 1 tsp. poultry seasoning
• 1 tsp. sage
• 1 tsp. thyme
• 1/4 cup parsley, fresh chopped
• 1 cup chicken broth
• 1 cup half and half
• 2 eggs, large, beaten
