Cooking tools:

  • Mixing bowl
  • Whisk
  • Cutting board
  • Chef's knife
  • Stove
  • Skillet
  • Spider strainer
  • Slotted spoon
  • Paper towel

Ingredients

  • 1/2 cup chickpea flour (aka besan, kadalai maavu)
  • 1/2 cup rice flour
  • 1 tbsp Salt
  • 1/2 tsp Hing/asafoetida
  • 1 tsp chili powder
  • a pinch Turmeric powder
  • water to make a medium thick batter
  • 2-3 cups assorted vegetables (potatoes, onions, ridge gourd, cauliflower, broccoli, peppers)
  • 2 cups oil to fry (approximate; I use avocado oil to deep fry as it has a high smoke point; next best is peanut oil)
