“A Fresh Fruit Cake for Christmas” – Oracibo

Ingredients

• ½ cup unsalted butter
• ¼ cup whipping cream
• 3 large eggs
• 1 tsp. pure vanilla extract
• 1 ¼ cups granulated sugar
• 2 ¼ cups unbleached flour
• 1 tsp. each baking soda, baking powder & salt
• 2 tart apples, peeled, cored, coarsely chopped
• 1 pear, peeled, cored, coarsely chopped
• 1 tsp. or so lemon juice
• ½ cup frozen cranberries, halved, not thawed
• ½ cup seedless red grapes, halved, unthawed (I used local Coronation grapes that I froze last fall)
