• -0.5 oz. lime juice

• -1/2 cup Florida strawberries (small dice)
• -1 tablespoon cilantro
• -1 tablespoon extra virgin olive oil
• -Salt and pepper to taste
• -1/3 cup Stoli Vanilla
• -2 tablespoons red wine vinegar
• -2 tablespoons shallot or sweet onion (chopped)
• -1 tablespoon garlic (minced)
• -1 tablespoon cracked black pepper
• -1 vanilla bean (scrape the vanilla bean caviar from inside)
• -Pinch of salt
• -3 1-ounce squares bittersweet chocolate
• -¼ cup, plus 1 tablespoon granulated sugar (divided)
• -4 tablespoons milk
• -2 egg yolks
• -5 egg whites
• -4 4-inch soufflé dishes, well buttered and dusted with sugar
• -Powdered sugar
