Ingredients

  • 3 ½ cups flour
  • ½ cup sugar
  • 1 packet dry yeast
  • 1 teaspoon salt
  • 4 tablespoon butter
  • 1 egg lightly beaten
  • ¾ cup water
  • ¾ cup warm milk
  • 1. Combine flour, sugar, salt and butter in a mixing bowl. Add the yeast.
  • 2. Mix egg with the water and milk, slowly adding to the dry ingredients to form a very soft dough.
  • 4. Remove from bowl onto a flour surface knead for 1 minute. Leave in a warm place for 2 hours.
  • 5. In the meantime Divide 250g butter into 3 portions.
  • 6. Once dough has risen and is double in size, remove and roll on a flour surface into a big Roti (at this point I started using cornflour on my bench)
  • 7. Grated ⅓ of the butter sprinkle with maziena. Flap the top, bottom and sides of the dough to the center (just as u would do for pie dough) place in the fridge for 10 minutes
  • 8. Repeat this process until the butter in finished.
  • 9. Leave in the fridge to rise for at least 6 hours (I make my dough a day before)
  • 10. Cut dough into four Portions. Sprinkle maziena on the bench and roll each portion into big Roti. So you should have 4 big Rotis.
  • 11. Cut each roti in 8. Now you should have 32 triangles.
  • 12. At the wider part of your triangle place a piece of dark chocolate or few chocolate chips. Roll to the narrow end. 13. Brush with egg and place few chocolate chips on the top.
  • 14. Bake at 180°C for 20 minutes and croissants are nice golden brown.
  • 15. Serve hot. You can reheat for 30 second in the microwave.
