Balsamic and Brown Sugar Peach Pie — Bread & Basil

Ingredients

• 12 oz all purpose flour (about 2 1/3 cups)
• 8 oz (2 sticks) unsalted butter, cold and cut into 1/2 inch cubes
• 1 tablespoon white sugar
• 1 teaspoon kosher salt
• Up to 4 oz (by weight, about 1/2 cup) very cold water
• 1 egg (for egg wash)
• 1.5 lbs ripe but firm peaches (about 4 large peaches)
• 1/2 cup dark brown sugar, packed
• 2 tablespoons cornstarch
• 1/2 teaspoon kosher salt
• 2 tablespoons good quality balsamic vinegar
• 1 teaspoon vanilla extract
• 1/2 teaspoon almond extract
