Mango Cheesecake Recipe
No-bake mango cheesecake is the easiest warm-weather dessert. There's no need to turn on the oven, and you can make it with any berries.
Ingredients
- 1-1/4 cups graham cracker crumbs
- 1/3 cup butter, melted
- 1/4 cup sugar
- FILLING:
- 1 envelope unflavored gelatin
- 3 tablespoons cold water
- 2 packages (8 ounces each) cream cheese, softened
- 1-1/3 cups sugar
- 1 cup heavy whipping cream
- 2 teaspoons vanilla extract
- 1/2 large mango, peeled and cubed (about 3/4 cup)
- 4 fresh strawberries, chopped
- GLAZE:
- 3 tablespoons plus 1/2 cup cold water, divided
- Optional: Whipped cream, mango pieces and sliced strawberries
