Mains - Spanish Chicken Stew

Ingredients

• 600 g Chicken large thighs skinned & boned chopped in chunks
• 1 Onions large finely chopped
• 500 ml Tomato passata
• 120 g Chorizo sausage chopped
• 100 ml White wine
• 2 tbsp Tomato puree
• 4 garlic clove finely grated
• 2 tbsp Smoked paprika
• 1 Red sweet/bell pepper finely chopped
• 1 tsp Thyme dried
• 12 Olives pitted of choice (optional)
• 1 Chicken stock cube or gel pot
• 1 tsp Freshly ground black pepper
• 3 tbsp Olive oil for frying
