• 750ml (3 cups) sunflower oil
• 250g fresh hake
• 100g self-raising flour
• pinch salt
• 200ml soda water
• large handful lettuce, shredded
• 6 soft flour tortillas
• 1 pineapple, peeled and cut into semi-circular slices
• ½ red onion, peeled and sliced into thin strips
• 125ml (½ cup) sour cream
• 50g Cheddar, finely grated
• 2 spring onions, finely sliced
