• 3 cups (75 g) salad greens of your choice, thinly sliced
• 1 tbsp butter, plus more for cooking
• 1 cup (150 g) unbleached all-purpose flour
• 1 tbsp baking powder
• 1 tsp sugar
• ¼ tsp salt
• ½ cup (125 ml) milk
• 2 eggs
• 1 cup (180 g) russet potato, peeled and grated (1 large potato)
