- Salt and freshly ground black pepper
- 1 clove garlic, minced
- 2 Tbsp extra virgin olive oil, divided
- 4 oz provolone cheese 1 cup
- 2 oz shredded mozzarella cheese (1/2 cup)
- 2 oz finely shredded parmesan cheese (slightly packed 1/2 cup)
- 6 - 8 canned artichoke heart, drained well and quartered (don't use marinated)
