Mum's strawberry and cream sponge cake
Nici Wickes' mum makes this sponge cake recipe with her eyes closed, and never fails to “drop” the sponge to ensure it’s light and fluffy. Serve filled with strawberries, cream and jam
Ingredients
- 6 tablespoon sugar
- 2 tablespoon water
- 4 eggs, separated
- 6 heaped tbsp cornflour
- 1 level tbsp plain flour
- 1 heaped tsp baking powder
- 1/4 cup jam, to fill
- 300 millilitre cream, whipped with 1 teaspoon icing sugar
- whipped cream and fresh strawberries to fill (optional when in season)
- icing sugar, for dusting
