- 1/2 cup (1 stick) butter, softened
- 1/2 cup Golden Barrel Coconut Oil
- 1 cup Golden Barrel Brown Sugar
- 2/3 cup Golden Barrel organic cane sugar
- 1 cup peanut butter, creamy or chunky ((I used creamy))
- 2 eggs, at room temperature
- 2 tsp vanilla extract
- 1 1/2 cups Paleo Flour (or AP flour)
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 1/2 cups oatmeal ((I used quick oats))
