Ingredients
- 500-750g courgettes – green or gold
- 4 large potatoes
- 1 onion, sliced or diced
- 2 eggs
- 250g grated cheddar cheese
- 1 Tblsp olive oil
- 4 leaves of fresh sage or lemon thyme
- 1 portion of puff, flaky or rough puff pastry [use frozen or make your own]
- salt and pepper
