Grilled Pizza with Caramelized Onions & Sausage

Ingredients

• 1 tablespoon olive oil
• 3/4 pound chicken or turkey Italian sausage (about 4 links), casing removed
• 1 recipe Pizza Dough (see below), or 1 pound fresh store-bought pizza dough
• Olive oil cooking spray
• 1 1/2 cups shredded Manchego cheese
• 1 cup shredded mozzarella cheese
• 1 cup caramelized onions (see below)
• 1/4 cup torn fresh basil leaves
• 1/4 cup olive oil
• 4 large yellow, red or Maui onions, or a combination, thinly sliced
• 3/4 cup red wine
• 1/4 cup balsamic vinegar
• 1 tablespoon sugar
• Salt and freshly ground black pepper
• 1 1/4 cups warm water (between 105 and 115 F)
• One 1/4-ounce packet active dry yeast
• 2 tablespoons olive oil
• 2 1/2 cups white bread flour
• 1 cup semolina flour
• 2 teaspoons salt
