Coconut Ice - Rick Bayless

Ingredients

• 2 1/2 cups unsweetened natural coconut water
• 3/4 cup plus 1 tablespoon sugar
• 1/2 teaspoon salt
• 1 13.5-ounce can unsweetened coconut milk
• 1 1/2 cups Jamaica Syrup (see recipe)
• Handful of pomegranate seeds (optional)
• 2 cups sugar
• 1 cup (1.5 ounces) dried jamaica (often called jamaica, available at all Mexican grocery stores)
